Ingredients and Spices for Cuban Chicken Stew:
- 1 tablespoon olive or vegetable oil
- 1/2 medium onion, peeled and cut into 1/4-inch-wide slices, cut vertically.
- 1/2 sweet pepper, seeded and seeded, cut into 1/4-inch pieces (red and yellow are sweet and lovely in this dish, but green is good in a pinch)
- 4 cloves of garlic, peeled and chopped
- 2.5 pounds chicken cutlets (drums and thighs are best on the bone, skin-on or bone-in, depending on your preference)

- 2 bay leaves

- 1.5 cups of uncooked chicken broth
- 1/3 cup of frozen peas
Easy Cuban Chicken Stew Instructions
- In a large or deep skillet (at least 10 inches), sauté onion, pepper, and garlic in oil over medium heat for 3 minutes or until onion is translucent.
- Add the rest of the ingredients except for the peas, mix until smooth, cover and bring to a boil over high heat. (takes 5-7 minutes)
- When the pot boils for about 1 minute, cover well, reduce the heat to medium and cook, covered, for 45 minutes, stirring occasionally. A good boil creates a little movement on the surface of the liquid, but without splashing.
- If necessary, adjust the spices (you can add a little salt), add the peas, reduce the heat to medium and cook, covered, for another 5-10 minutes, stirring occasionally.
- Serve with starch of your choice. Stew is thin, filling and flavorful compared to fried rice. have a good time! :)
