- 4 cherry tomatoes or 1/2 medium tomato

- 1 small clove of garlic
- 1 tablespoon fresh parsley
- 1 1/2 teaspoons mixed dried Italian herbs
- 1 teaspoon sweet pepper
- 1 teaspoon of salt
- 1 teaspoon black pepper powder
- 1 teaspoon. dry pepper flakes
- 75g tinned beans (I used a mix of four nuts)
- 2 tablespoons Parmesan (vegan or real)
- 40g feta (vegan or real)
- Note that you can add pine nuts, seed mix (if desired).
Steps to make easy mushroom stuffing (vegan/vegetarian).
- Preheat the oven to 180 degrees Celsius (or 350 degrees Fahrenheit).
- Remove the stems from the mushrooms and place in a food processor
- Drizzle the mushrooms with most of the olive oil and set aside (about 1 teaspoon).
- Add the mushroom stems, spinach, parsley, tomatoes, salt, pepper, chili, pepper, Italian seasoning, and remaining olive oil to a food processor and blend. Pour into a bowl.
- Add cheese and nuts - When I'm making vegan and vegetarian dishes, I divide the mixture into 2 bowls for separate cheese options (real cheese on the left, vegan cheese on the right). Mix and grind the nuts a little with a fork or potato.
- Pour the mixture over the mushrooms and bake them for 25-30 minutes. Remove from the oven (you can grate some feta cheese on top), then serve with vegetables or salad.
